Cakes are not only baked, they can also be made from biscuit or dry biscuits, for example from "Lemon", "Chess" or "Stolichny". These desserts do not require additional baking, but nevertheless they are very tasty and easy to prepare.
Vodka cake
Ingredients:
- Chess cookies - 400 grams;
- raw eggs - 3 pieces;
- cocoa - 2 tbsp. spoons;
- butter - 300 grams;
- vodka - 50 ml;
- granulated sugar - 1 ½ cups;
- rum essence;
- vanilla sugar - 1 sachet;
- candied fruits;
- peanuts (roasted) - 1/3 cup.
First, take raw eggs, break them into an enamel bowl and add granulated sugar, whisk a little and add cocoa powder. Grind the resulting composition until smooth. Place the enamel bowl on low heat and stir the egg mass continuously, trying to bring it to a boil, but not allowing the proteins to curdle.
Remove the container with the egg mass from the heat, refrigerate and add butter, pour in vodka and, if desired, add a few drops of rum essence and a bag of vanilla sugar. Stir the resulting cream and divide it in two. Take cookies "Chessboard" or "For tea" and pass them through a meat grinder (you can crush them in a mortar, but this is a longer process). In the crushed cookies, add half the cream and mix well until smooth.
To give the future cake a presentable look, use a special split mold to form the cake. Place the baking dish on a large platter and place the sandy-creamy mass in it, tamping the layer tightly into the baking dish. Put the other half of the cream on top of the cake, spread the candied fruits and toasted peanuts over the surface of the cream. Without removing the mold, place the dish with the cake in the refrigerator for 1-2 hours, when the cake has cooled a little, carefully remove the split form from it and serve the dessert for tea.
Cake with marmalade and nuts
Another interesting cookie dessert recipe, for the preparation of which you need the following products:
- cookies "Creamy" or "For tea" - 500 grams;
- fruit jelly of different colors - 500 grams;
- walnuts (peeled) - 50 pieces;
- sugar - 20 tbsp. spoons;
- cocoa - 3 tbsp. spoons;
- flour - 2 tbsp. spoons;
- butter - 500 grams;
- milk - 1 glass;
- rum essence - 1 tsp;
- vanilla sugar - 1 sachet.
Start making the cake with a custard; for this, mix cocoa with 15 tbsp. tablespoons of sugar and two tablespoons of flour, add cold milk to this mass and mix well. In an enamel bowl, place the mixture on low heat and stir the cream constantly until thick. Do not bring the mixture to a boil. Remove the container with the cream from the heat and cool the mixture, then add the butter, vanilla sugar and rum essence, beat the creamy mixture until fluffy.
Now you can start preparing the base of the cake. To do this, crush the liver into crumbs, cut the marmalade into small cubes. Pour 5 tablespoons of sugar into the cauldron and put it on the fire to get caramel, when the sugar melts, pour the walnut kernels cut into quarters into the cauldron, quickly stir the nuts in the syrup so that they are completely covered with a sweet crust, and remove the cauldron from heat.
In a large bowl, add crushed cookies, gummy cubes and caramelized nuts, add 2/3 of the pre-prepared cream, gently stir this mixture and place on a large flat plate. Give the mass to the shape of a cake, grease the cake with the rest of the cream on top, sprinkle with cookie crumbs. Put the finished cake with marmalade and nuts in the refrigerator, it is better to serve it on the second day.
