Step 1

White chocolate differs from the usual dark chocolate in that it does not contain cocoa powder, but it contains a sufficient amount of valuable cocoa butter and therefore is suitable for melting to obtain a high-quality glaze for further use. When melting white chocolate, it should be borne in mind that the fats and cocoa butter contained in milk powder have different melting points, so it is very important to observe the temperature regime and uniformity of melting.

Step 2

Pour 3-4 cm of water into a saucepan with low sides and place on the burner. In a clean and completely dry container with a smaller diameter, place a chocolate bar, broken into small pieces. You can melt more chocolate if needed, but try not to melt more than 250 g at the same time.

Step 3

Bring the water to a near boil, but do not boil it. Reduce the temperature and carefully place the bowl of chocolate in the pot of water. Make sure that not a drop of moisture gets inside this container, white chocolate is very sensitive to water! Stir the mixture gently to distribute the temperature evenly. As soon as all the pieces of chocolate are dissolved, the container with the mass can be removed from the water and, after a few minutes, used for further preparation of desserts or decorations.
