Recipe for tomatoes in their own juice

Cooking tomatoes in their own juice does not require serious culinary skills. Even a novice hostess can cope with this task. It is very difficult to spoil this appetizer. And if you strictly follow all the actions prescribed in the instructions, the result will be 100% successful.

  • 1, 2 kg of medium-sized tomatoes with dense skin;
  • 1, 8 kg of large, fleshy tomatoes;
  • 3 tbsp. l. salt;
  • 3 tbsp. l. granulated sugar;
  • 2 tbsp. l. table vinegar 9%.

From this amount, you should get 2 liters of snacks.

  1. Rinse the tomatoes thoroughly under running water.
  2. Put the tomatoes in a basin, pouring water over them for 10-20 minutes.
  3. When making juice for pouring, large, overripe fruits are required. They must be blasted in boiling water for 4 minutes, then quickly cooled in cold water.
  4. Separate the skin. After the "contrast shower", it quickly and easily falls behind the pulp.
  5. Cut the peeled tomatoes. Grind them with a blender.
  6. Add granulated sugar and salt to the resulting tomato mass. Mix everything thoroughly and put on the stove.
  7. Bring to a boil over medium heat. After that, cook for 20 minutes, removing the foam. It is important to ensure that the tomato mass does not burn.
  8. Add vinegar 1 minute before turning off the stove.
  9. Sterilize jars and lids.
  10. Pierce whole tomatoes with a toothpick near the stalk. This will prevent them from cracking when in contact with hot water.
  11. Place fruits tightly in sterile jars.
  12. Pour boiling water into the jars up to the very neck. Cover with lids. Leave on for 15 minutes.
  13. Drain the jars into a saucepan and bring to a boil. Cook the marinade for 3 minutes.
  14. Pour the tomatoes over again. This time already for 5 minutes.
  15. Drain the jars. We won't need it anymore.
  16. Pour boiling tomato juice into the tomato jars to the very lid. There should be no air in the container.
  17. Close with sterile lids. Put the jars upside down, cover with a blanket until they cool.

These tomatoes can be stored well throughout the year in a cool, dark room.

Recipe for tomatoes in tomato juice

In this recipe, the base is tomato paste. But this does not spoil the final version at all. These tomatoes are very aromatic and tasty.

  • 1.5 kg of small tomatoes with dense skin;
  • 150 g tomato paste;
  • 2 liters of water;
  • 2 bay leaves;
  • 4 tbsp. l. granulated sugar;
  • 1 tbsp. l. salt;
  • 1 slice of chili.

  1. Dissolve tomato paste with water in a saucepan.
  2. Add all the spices. Boil. Cook for 7 minutes.
  3. Wash the tomatoes. Make punctures with a toothpick near the stalk.
  4. Sterilize banks.
  5. Fill the jars with tomatoes. Pour boiling water over. Cover the container with lids. Leave on for 15 minutes. Drain the water. We won't need it anymore.
  6. Pour boiling tomato mass into jars with tomatoes. Roll up. Turn the container upside down, cover with a blanket until it cools completely.
