Tomatoes in their own juice are a popular form of preparation. They are not only tasty and aromatic, but also healthy, because vinegar and aspirin are not used during cooking.

Required Ingredients

To cook tomatoes in their own juice, you need the following:

- fresh tomatoes - 10 kg (4 kg for curling and 6 kg for juice);

- sugar - 70 g;

- salt - 80 g.

Only ripe tomatoes should be selected. They should be small and free from rot. For the preparation of tomato juice, it is permissible to use large fruits.

Cooking process

Take two or three liter jars and sterilize them. Put a saucepan on the fire, bring to a boil and lower the lids there. Soak them over medium heat for 5-7 minutes.

Thoroughly wash the tomatoes that are to be curled. Using a knife, carefully remove the stalks from them. Take a toothpick and pierce the fruit in several places. Dry the tomatoes on a kitchen towel and then arrange them in sterile jars. Cover the vessels with lids for a while.

Make tomato juice. The easiest way to do this is with a juicer. If it is not at hand, then you can take a regular meat grinder. Alternatively, you can use another method of juicing. You need to take ripe tomatoes, cut them into large pieces, put in an enamel pan, cover with a lid, and then cook until tender. Next, the resulting mass is passed through a sieve.

It is strongly discouraged to use ready-made tomato juice purchased in stores, or to dilute tomato paste in water, because these products have undergone industrial processing. Therefore, you will not be able to cook healthy tomatoes with them.

Put the juice made at home on the fire, bring to a boil and stand for 15 minutes. Add salt and sugar to it. Stir all these ingredients thoroughly, and then start pouring the juice over the tomatoes. Then you can start rolling up the banks. Subsequently, they will need to be turned over with the lids down, wrapped and left in two days.

Useful Tips

If you want to make spicy tomatoes in your own juice, add one crushed red pepper pod to each jar during cooking. You can also add a few black peppercorns.

To give the blanks a spicy taste, you need to add cloves (5 g) and bay leaves (2 pcs.). Some also use garlic when cooking tomatoes in their own juice. It should already be added at your discretion, while 1-2 cloves per three-liter can is quite enough.
