Step 1

Preheat oven to 180 degrees. Separate the whites from the yolks. Do this as carefully as possible. If even a little yolk gets into the whites, then the meringue won't be able to beat. Put the squirrels in the refrigerator to cool.

Prepare the crust batter. To do this, soft butter or margarine must be ground with one glass of sugar. Add yolks and flour. At the same time, mix the flour with baking powder or baking soda. Knead the dough, wrap it in foil or put it in a bag and refrigerate for half an hour.

Step 3

While the dough is in the refrigerator, cook the cranberry jam. To do this, grind the cranberries with sugar and boil for a few minutes.

You can also take ready-made cranberry jam.

Of course, you can get creative and try using other berries or even fruits. Still, the zest of this pie is precisely in the sour taste of cranberries in combination with sweet meringues.

Step 4

Remove the chilled dough from the refrigerator. It should be soft, you won't be able to roll it out. So just put it in a greased mold and smooth it out with your hands. To prevent it from rising during baking, you can prick it with a fork over the entire surface. You can also use beans. Pour it onto the dough - it will become a load that will not allow the dough to rise too much.

Put in the oven for 10 - 15 minutes. Remove the pie from the oven and do not forget to remove the beans.

Step 5

Cook cranberry jam. Mash cranberries with sugar and boil for about five minutes.

You can also take ready-made cranberry jam.

Of course, you can get creative and try using other berries or even fruits. Still, the zest of this pie is precisely in the sour taste of cranberries combined with sweet meringues.

Step 6

Prepare the meringue. Whisk the cooled egg whites and sugar until stiff. It is better to use powdered sugar instead of sugar. If there is no ready-made powder, then the sugar can be crushed in a coffee grinder. Meringue cooked with powdered sugar turns out to be softer in consistency. Add the powder to the proteins not all at once, but in portions, by a teaspoon.

To make the meringue whisk easier and faster, you can add a pinch of salt.

Step 7

Spread the crust, baked almost until tender, with cranberry jam, decorate with the meringue and put back in the oven. When the meringue is browned and takes on a beautiful color, the cake is ready!
