Turkey meat is a dietary product due to its low fat content, high protein content and nutrients. Boiled meat can be used to make broth, jellied meat and many delicious dishes based on it.

It is necessary

    • For boiled turkey croquettes:
    • 400 g of boiled turkey meat;
    • 100 g mashed potatoes;
    • 1/2 onion;
    • 2 tbsp butter;
    • 3/4 cup flour
    • 1/4 cup milk
    • 1/4 cup chicken stock
    • 2 eggs;
    • 1 tbsp. l. water;
    • 250 g bread crumbs;
    • 2 apples;
    • 3 tbsp. l. raisins;
    • 1 tbsp. a spoonful of honey;
    • 1 pod of hot pepper;
    • ground red pepper
    • salt.

Instructions

Step 1

Cook the turkey by cutting it into pieces like a chicken: separate the wings, thighs, then the breast from the back. A common idea is a rather large bird, so it is inconvenient to cook it entirely, and even the breast and back are recommended to be divided into two parts.

Step 2

Dip the cut meat in cold water and cook for one to one and a half hours. To cook the broth for jellied meat, extend the cooking time to two hours. Add the roots and spices to the pot (after boiling and removing the foam) to make the broth flavorful, as the turkey meat itself will not give the broth a bright flavor.

Step 3

Use, for example, parsley root, bay leaf, black peppercorns, onions, carrots.

Step 4

Prepare boiled turkey croquettes: finely chop the boiled meat and half an onion. Melt two tablespoons of butter in a small saucepan and sauté the onions in it for 5 minutes over low heat. Add flour, stir and heat for another three minutes.

Step 5

Add milk and chicken broth to the mixture, cook, stirring occasionally, until thickened, about three minutes. Remove the saucepan from heat, add chopped turkey, mashed potatoes, ground red pepper, salt. Cool and refrigerate for two hours.

Step 6

Mix two eggs with one tablespoon of water and whisk lightly. Form the chilled mass into small balls, roll in a little flour, dip in the egg mixture and roll in breadcrumbs.

Step 7

Prepare the sauce: finely chop the apples, drizzle with lemon juice, chop some green onions and a pod of hot pepper. Mix apples, raisins, hot peppers, honey in a bowl. Salt and stir, refrigerate for one hour.

Step 8

Serve croquettes with gravy. You can fry them in vegetable oil, but if fried foods are undesirable, simply reheat them before serving in the microwave.
