  • - flour - 700 g;
  • - milk - 250 ml;
  • - sugar - 400 g;
  • - butter - 300 g;
  • - eggs - 3 pcs.;
  • - yeast - 20 g;
  • - salt - 3 g;
  • - refined sunflower oil - 20 ml;
  • - cinnamon - 30 g;
  • - vanilla sugar - 40 g;

Instructions

Step 1

Heat the milk in a saucepan until well warm. Knead the yeast with your fingers and throw it into the milk. Add 2 tablespoons of sugar and flour each. Mix everything thoroughly. Cover the pan with a towel and leave it at room temperature for 20 minutes - the mixture should be covered with fine bubbles.

Step 2

Melt 100 g of butter and let it cool. Break 2 eggs into a separate bowl and stir them with a fork until smooth. Add 4 tablespoons of sugar, stir and pour into a bowl of yeast mixture. Pour the cooled oil there. Mix everything carefully.

Step 3

Sift 3 cups of flour (540 g) into another bowl. Add a pinch of salt and mix. Add yeast mixture and knead the dough. It should remain soft and elastic, so do not add excess flour. Then put the dough in a clean deep dish, cover with a towel and leave at room temperature for 1-1.5 hours. It should rise by about 2 times. Then we knead it and put it on the board.

Step 4

Divide the dough into several parts, 140-160 g each (it turns out about 8). Roll out a small ball from each part, and then, flattening it, roll out a circle with a diameter of about 20 cm. Grease each circle with ghee, sprinkle with 1 tablespoon of sugar, and then 1 teaspoon of a mixture of cinnamon and vanilla sugar. Then we fold the circle into a thin roll (3-4 cm). We cut it in half lengthwise, not reaching one of the edges 2 cm. Then we fold one half in a zigzag direction to the uncut end, and on top of it we also wrap the second - a classic "curl" is obtained.

Step 5

Line the baking sheet with baking paper and lay out the buns. Cover the baking sheet with a towel and let the buns stand for another 15-20 minutes. Then we coat them with yolk on top.

Step 6

Preheat the oven to 180 degrees and set the buns to bake for 20-30 minutes.
