It is necessary

    • 1 cup semolina
    • 3 eggs;
    • 2/3 cup sugar;
    • 500 ml of kefir;
    • 1 bag of vanillin;
    • butter and flour for greasing the mold.

Step 1

Pour the kefir into a deep cup. Add semolina to it and mix thoroughly. Leave the mixture on for 40 minutes. The semolina should swell well.

Step 2

Break the eggs into a cup and separate the whites from the yolks. Place the proteins in the refrigerator for 30 minutes. Then beat the cooled egg whites using a mixer to foam.

Step 3

Add sugar and vanillin to the egg yolks. Beat the mass with a mixer.

Step 4

Add whipped yolks with sugar to the swollen semolina with kefir and mix thoroughly. Then gently spoon out the whipped egg whites and stir the mixture so that they do not lose their volume.

If desired, add raisins, canned or fresh pitted cherries, dried apricots, candied fruits to the dough.

Grease a baking dish with a lump of butter and sprinkle with flour. Place the dough in it and smooth with a spatula.

You can make marbled semolina pudding. To do this, melt the dark chocolate in a water bath, cool a little and pour it into the dough in a thin stream in a spiral. Don't stir. Pour in the chocolate when the dough is already in the baking dish.

Preheat the oven to 180 degrees and place the dough pan in it. Bake the semolina pudding for about 45 minutes. Check the readiness of the test with a match or toothpick. If it remains dry, then the dough is baked.
