- - Fresh spinach: 500 g;
- - raisins: 50 g;
- - white bread: 1-2 slices;
- - extra virgin olive oil: 3 tbsp. spoons;
- - pine nuts: 25 gr.;
- - garlic: 1-2 cloves;
- - ground black pepper: to taste;
- - salt: to taste.
Instructions
Step 1
Pour boiling water over the raisins and leave for 10 minutes. If the raisins are very large, like "jumbo", then you can cut them into smaller pieces. Then drain the water and pat the raisins dry in a paper towel.
Step 2
Remove the tails from the spinach leaves. Wash the leaves, let the water drain.
Step 3
Cut the bread into cubes, fry in 1 tbsp. a spoonful of olive oil until golden brown, blot with a paper towel to remove excess fat. You can take ready-made croutons.
Step 4
Lightly fry the pine nuts in the same skillet. Place on a paper towel.
Step 5
Crush the garlic with a garlic press or chop finely. Fry in a skillet with two tablespoons of olive oil. Add pine nuts. Then add spinach and simmer over low heat for about two minutes. The spinach should be soft.
Step 6
Put the mixture from the pan into a plate, add the raisins, stir gently. Then add the croutons. Serve immediately to keep the salad warm and the croutons crispy.
