Step 1

Cut the onion into small cubes and place in a frying pan, add oil and put on medium heat. Simmer until transparent for 15-20 minutes, stirring occasionally. Make sure that the onions are not fried, otherwise the dish will get the wrong smell and will taste bitter.

Wash the liver, peel off the film and cut into cubes about 3-4 centimeters long. Heat oil in a skillet and add liver to it. Better take veal. If it comes from an adult animal, soak it in milk or at least water before cooking. Soaking time - from 30 minutes to 4 hours, depending on the age of the animal.

Stirring constantly, fry the liver over high heat for 2-3 minutes. Add flour, stir and transfer to skillet with onions. You don't need to add flour, it acts as a thickener for the gravy.

Step 4

When you add the liver to the onion, a crust of baked juices will remain in the pan. Pour in a few tablespoons of water, heat so that the juices dissolve, and pour this mixture into the main pan.

Put on medium heat, add sour cream, pepper and stir. Better take the village sour cream, so that it sour a little, then the dish will turn out to be more saturated. And in terms of quantity, you need to put less than the store one. That is, if the store needs 500 grams, 250 grams will be enough for the village one.

Bring to a boil. Reduce the heat to a minimum, cover the pan and simmer for 15-20 minutes.
