Nutritionists recommend regularly including trout in the diet. This fish is rich in omega-3 polyunsaturated fatty acid and contains low cholesterol levels. It has excellent taste and delicate texture. Trout goes well with mushrooms and vegetables. It is usually steamed, fried or baked in the oven and served with various sauces.

    • 500 g trout fillet;
    • 200 g of fresh mushrooms;
    • 3 tbsp. tablespoons of white table wine;
    • 1 tbsp. a spoonful of flour;
    • 2 tbsp. tablespoons of butter;
    • ground black pepper;
    • salt.

Instructions

Step 1

Wash the trout fillets, dry and cut into portions, which are arranged in one row in a shallow saucepan.

Step 2

Rinse the mushrooms (champignons or porcini) thoroughly, peel and cut into large slices.

Step 3

Place the mushrooms in a saucepan between the pieces of fish.

Step 4

Salt everything, sprinkle with pepper, pour in white table wine, a glass of water (or fish broth). Cover the pan with a lid, put on medium heat and simmer for 15-20 minutes. Note that the fish should be submerged in the liquid about 2/3 of the thickness of the piece.

Step 5

Instead of using water for this recipe, it is best to use broth that is pre-cooked from bones and fish strips. It can also be made with heads (no gills), tail and fins. Rinse the bones well, place in a saucepan with cold water and cook over medium heat for 40-50 minutes, adding peeled and chopped onions and parsley root. Strain the finished broth through a sieve.

Step 6

When the fish is cooked, pour the resulting broth into another saucepan, put it on low heat and boil the broth until it remains about a glass. Mix an incomplete tablespoon of flour with the same amount of butter and add to the fish and mushroom broth. Stirring continuously, boil the sauce for 3-4 minutes. Then remove the pan from the heat, add another lump of butter and stir again thoroughly. The butter should combine with the sauce. Then add salt and strain the sauce through a gauze filter.

Step 7

If the fish was cooked without wine, then it is necessary to add a teaspoon of lemon juice to the prepared sauce. Diluted citric acid can be used.

Step 8

When serving, transfer the boiled fish to a preheated dish, put mushrooms on each piece and pour over the sauce.

Step 9

Boiled and fried potatoes, salad, fresh and lightly salted cucumbers, as well as lemon slices can be served with fish.
