Step 1

Pork is traditionally used for boiled pork. It is not worth removing layers of fat from it - in which case, you can get rid of them after cooking. The fat will make the boiled pork more juicy. You can also use other boneless meats.

Step 2

We disassemble the head of garlic into cloves, clean. We cut half the cloves into longitudinal plates 2-3 mm thick - about 20 slices should turn out. Grind the other half, mix with salt and spices ground in a mortar. Spices for boiled pork are selected to taste. Be sure to use only black and red ground pepper. You can add to it: chopped bay leaves, cumin, paprika, fennel. Roll the chopped garlic cloves in a mixture of salt and spices.

Rinse the pork with cold water and dry it completely. We make small cuts with a knife and press the pieces of garlic dipped in spices into them. With the remaining spices, thickly coat the entire piece of meat - so that the garlic cloves do not fall out. Put the pork in a tightly sealed container and put it in the refrigerator for 12 hours.

After removing from the refrigerator, the meat should be kept at room temperature for about an hour. Next, we wrap it with a double layer of foil. It is necessary to pack as tightly as possible so that the juice released during frying does not leak out and evaporate.

Step 5

Put the meat in foil on a baking sheet and put in the oven. We turn it on at 120 degrees, and 10 after warming up - by 180. At this temperature we bake for 1, 5-2 hours. Periodically, you can pour a little water on a baking sheet so that the meat does not burn. Then carefully open the foil (so that the juice does not flow out). We bake another 15 minutes at a temperature of 200 degrees, so that the boiled pork acquires an appetizing crust.

Step 6

Cool the finished boiled pork at room temperature, and then send it to the refrigerator for 12 hours.
