Potato pies stuffed with meat are a great option for those who want to diversify and complement the taste of fried potatoes. Try to make them according to a very old recipe, according to which mothers and grandmothers cooked. Each new generation brings its own flavor to it.
It is necessary
- - 500 g of meat;
- - 10 medium potatoes;
- - 2 raw yolks;
- - 3-4 tbsp. l. flour for dough and 1-2 tbsp. l. - for crumbling;
- - 2 onion heads (one for minced meat and broth);
- - 4-6 cloves of garlic (for minced meat, broth or potatoes);
- - oil for frying;
- - salt, pepper, spices to taste;
- - sour cream or sauces at will.
Instructions
Step 1
Boil the meat, adding onion, garlic, pepper, spices and salt to taste to the broth.
Step 2
Wash and boil the potatoes in their uniforms, let cool until warm. At the beginning of cooking, add a couple of bay leaves and one or two garlic cloves. This will give the potatoes a special flavor. Other spices are also added, for example, dried dill (not necessarily chopped, whole stems and seeds are also suitable), cumin, parsley, ginger, turmeric and cinnamon. You can also use fresh herbs, tie them with a thread, put in a pot with potatoes, and at the end of cooking, remove and discard.

Fry the onion and garlic.

Turn the meat through a meat grinder.

Combine the resulting minced meat with fried onions and garlic, lightly fry everything together, salt and pepper, add spices and garlic as desired and taste. You can add a little broth, in which the meat was cooked, if the minced meat is dry.
Step 6
Peel the potatoes, turn through a meat grinder.
Step 7
Add yolks, flour to it, salt and pepper to taste, mix.
Step 8
Pour 1-2 tbsp on the table. tablespoons of flour for rolling. Add flour as needed to keep the dough from sticking to your hands. Hands can also be greased with vegetable oil.
Step 9
Take 1 tbsp. a spoonful of potato dough, roll in flour on the table, first roll a ball, and then, pressing on it, get a "pancake", put the minced meat on top and pinch the edges. The pie is ready.
Step 10
Form the rest of the pies in the same way.
Step 11
Fry the resulting pies in a skillet in oil until golden brown on all sides.
Step 12
Put ready-made pies on a napkin to absorb excess fat. Serve with sour cream or sauce to taste. You can even eat it cold.
