  • - 200 g of granulated sugar;
  • - 125 ml of water;
  • - ¼ h. L. tartar;
  • - 2 eggs or 5 yolks;
  • - 350 g of butter.
  • For chocolate cream:
  • - 240 g of icing sugar;
  • - 175 g softened butter;
  • - 1 tsp vanilla essence;
  • - 165 g of chocolate.
  • For buttercream:
  • - 3 cups of powdered sugar;
  • - 80 g of butter;
  • - 1 ½ tsp. vanillin;
  • - 1-2 tbsp. l. milk.

Instructions

Step 1

Butter cream with praline or nuts

Toss the granulated sugar, water, and tartar in a small heavy-bottomed saucepan. Put on medium heat and simmer, stirring occasionally, until the mixture boils. Then cover the saucepan with a lid, reduce heat to low and cook for another 2 minutes until the sugar is completely dissolved. After that, remove the lid, carefully remove the sugar grains from the sides of the pan with a cooking brush and continue cooking until the syrup temperature reaches about 114 ° C. Fill a wide, deep skillet about 2 centimeters with water and bring to a boil. In a small ovenproof bowl, beat the eggs or yolks, separated from the whites, on high speed with a mixer until a thick, pale yellow mixture is obtained. Whisking constantly, pour the hot syrup into the eggs in a continuous thin stream around the edge of the bowl.

Then place the bowl in a frying pan with boiling water and stir the mixture continuously with the jelly until the temperature of the egg-sugar mixture reaches 70 ° C. Then remove the dishes from the heat and continue whisking, adding a tablespoon each of softened butter until the mixture cools down to room temperature. The cream should be smooth and soft. If desired, stir in chopped kernels of nuts (walnuts, almonds, hazelnuts) or add a small amount of alcohol (cognac, liqueur, vodka).

Chocolate cream

Melt white or milk chocolate in the microwave or water bath. Put softened butter, powdered sugar in a large bowl, pour in vanilla essence and beat all ingredients thoroughly with a mixer on low speed until smooth. Then add the melted chocolate, increase the mixer speed and beat the cream for another 1-2 minutes. Then the chocolate cream can be applied to the wafer cakes.

Butter cream

Heat butter over medium heat until light brown. Watch carefully so that it does not burn. Then cool and combine in a medium bowl with powdered sugar. Add vanillin and a tablespoon of milk. Mix everything thoroughly with a spoon. After that, while continuing to beat, gradually pour in enough milk to make a smooth lush cream. If it gets too thick, add more milk (literally a few drops at a time). If it turns out to be very liquid, add a little powdered sugar.
