Berry pie (especially with loved ones and fresh ones) is a very tasty and mouth-watering culinary creation. Such a delicacy is perfect for any occasion, whether it is the birthday of your loved one and loved one or just small gatherings and tea drinking at home or at work. Sweet berry pie is a good addition to a friendly conversation over a cup of tea. And cooking it is not at all difficult.

Step 1
Be sure to sort and rinse the berries. Remove twigs, leaves and other small foreign litter from them. In cold water, wash about five hundred grams of your favorite berries (black or red currants, blueberries, cranberries). Put the berries in a colander or sieve and pour over boiling water, after the water is completely drained, cover with granulated sugar and stir. Let the berries settle for an hour or two and drain the resulting juice. The juice can be sweetened and served with the pie. Depending on the type of berry selected (how sour it tastes), the amount of granulated sugar added is determined. If the berry is sweet or moderately sour, then one or two glasses of sugar is enough for five hundred grams of berries. If the berry is sour (cranberry), then you need two or three glasses of sugar.
Step 2
Melt two hundred grams of butter or margarine (to a thick sour cream consistency) and add two cups of flour, two egg yolks and two tablespoons of granulated vanilla sugar to it. Mix the resulting mass thoroughly with a fork, and then knead well into a homogeneous dough. Then the dough should be put in the refrigerator for twenty to thirty minutes. After this time, separate most of the dough and place it in a mold, greased with butter and sprinkled with a thin layer of semolina. Do not forget to make the bumpers so that the juice does not flow out of them. Put the berries on the dough (evenly distributing them over the surface). From the rest of the dough, make a top of the pie (criss-cross wire rack or any other pattern).
Step 3
Then preheat the oven to two hundred degrees and put the prepared pie in it. Bake it for thirty to forty minutes until the top layer (wire rack) is golden brown. To prevent the top of the pie from burning and have an appetizing appearance, brush the dough with egg white.
