Cooking French cuisine is a real pleasure, because they are not only delicious, but also beautiful and sophisticated. Even biscuits become a gastronomic delight when prepared according to the recipes of Parisian chefs. And having made the famous "Madeleine" with oat bran, you will also follow a diet, enjoying tender shells made of puffed dough.
Classic Madeleine biscuits according to Julia Vysotskaya's recipe
Ingredients:
- 2 chicken eggs;
- 3 tbsp. oat bran of any brand;
- 2 tbsp. flour;
- 0.5 tsp baking powder;
- 1 lemon;
- 6 tablespoons icing sugar;
- vegetable oil.
Grind the bran in a mortar or using a hand blender, combine the resulting powder with flour and baking powder and mix well. Grate the lemon zest on a fine grater, cut it in half and squeeze the juice out of one half. Whisk eggs together with 5 tablespoons. powdered sugar with a whisk or mixer until a fluffy air mass is obtained. Throw in the zest, pour in the citrus juice and beat again.
If the eggs are not beating well, then they are not chilled enough. Place a bowl of eggs in the refrigerator for a short time, or place pieces of ice under it.
Preheat oven to 180oC. Pour the bran flour into the prepared cookie base and mix thoroughly. Grease a special Madeleine baking dish with vegetable oil and fill it with dough. Or, simply prepare a flat baking sheet, line it with parchment paper, and spread the batter into small-diameter cakes 2 cm apart. Bake in the oven for 10 minutes, transfer the finished cookies to a dish or tray and sprinkle with the remaining powdered sugar through a fine sieve.
Healthy cookies "Madeleine" according to the Ducan diet
Ingredients:
- 3 tbsp. oat bran;
- 3 tbsp. soft cottage cheese;
- 2 chicken eggs;
- 1 tablespoon wheat bran;
- 0.5 tsp baking powder;
- 2 tbsp. corn starch;
- 1, 5 tsp fructose;
- 2-3 g of almond flavor.
Mash the curd, mix with the eggs and rub until smooth with a fork or whisk. Pour starch, chopped bran and baking powder into another dish. Mix both dry and liquid mixtures in one bowl and stir. Then add fructose and flavor.
Such pastries can also be made in the form of biscuits by pouring the dough into molds for small muffins. Please note that the Ducan diet allows you to eat up to half of the indicated portion per day.
Pour the Madeleine dough into traditional shell-shaped tins, or use whatever you have on hand to make cookies. Cook it quickly for 12-14 minutes or 18-20 minutes for biscuits in an oven preheated to 180oC. Cover them with a thin layer of diabetic berry jam if desired.
