Ingredients for Lean Dried Apricot Apple Cakes:
- flour 200 g;
- sugar 100-150 g;
- cinnamon 1 tsp;
- baking powder 1, 5 tsp;
- vegetable oil 4 tbsp. spoons;
- homemade applesauce 250 g;
- dried apricots: 150 g;
- a pinch of salt;
- icing sugar.
The recipe for lean apple muffins with dried apricots is very simple.
First you need to make homemade applesauce. To do this, you need a baked apple and a sieve. You need to take large, moderately juicy apples, cut them in half, peel and bake in the oven over medium heat until tender. Rub the apple pulp through a sieve until smooth.
You can use ready-made baby puree instead of homemade applesauce.
Rinse dried apricots well and chop finely. Dried dried apricots should be dried on a paper towel. Manufacturers often process dried fruits with special mixtures so that they are well preserved and do not deteriorate during transportation. It is best to first pour boiling water over dried apricots, hold for a few minutes, then rinse under running water. Then let it stand for another 15-20 minutes in cold water and rinse well again under running water.
Sift the flour twice. In a large bowl, combine sifted flour, sugar, salt, baking powder, cinnamon and chopped dried apricots. Mix pre-prepared homemade applesauce with vegetable oil. Gently combine the apple and sunflower oil mixture with dry ingredients and mix thoroughly.
Grease muffin baking tins with vegetable oil and sprinkle with flour. Preheat the oven to 180 degrees. Divide the dough into molds and bake for about 30 minutes.
The muffin pan should be no more than 2/3 full, as muffins rise during baking.
Use a wooden stick or toothpick to check if the muffins are done. While still hot, the finished muffins are sprinkled with powdered sugar and allowed to cool.
