Homemade cakes can be cooked in the oven, but frying them is much quicker. Do not add too much oil, baked goods should not be greasy. Use fresh or frozen fruits and berries, dried fruits, jams and marmalades for filling. Serve warm with hot tea or coffee.
Butter pies with berries
You will need:
- 3 eggs;
- 1 glass of milk;
- 100 g butter or margarine;
- 50 g of yeast;
- 1 tbsp. a spoonful of sugar;
- 0.25 teaspoons of salt;
- 3 glasses of wheat flour;
- vegetable oil for frying.
For filling:
- 1 glass of fresh berries (raspberries, blueberries, blueberries, strawberries);
- sugar to taste.
Heat milk, dissolve yeast in it, add salt and sugar. Beat the eggs and add them to the mixture too. Pour in the sifted flour in portions. Knead the dough that is not too steep, cover the container with it with a towel and place in a warm place for 1 hour.
When the dough rises, crush it with a spoon. If possible, let the dough rise again. Then place it on a floured board. Knead the dough a little with your hands and divide it into small lumps, roll each into a cake. Put a spoonful of pre-washed and dried berries on it, add sugar to taste. Do not add too much sugar, otherwise it will leak out during frying. Pinch the pies and let them sit for 10 minutes.
Heat refined vegetable oil in a deep skillet. Place the patties seam side down and brown until golden brown. Turn the pieces over and brown on the other side. Reduce heat and bring patties until tender. Place them on a paper towel lined plate. Serve warm.
Curd dough pies
You will need:
- 400 g soft cottage cheese;
- 2 eggs;
- 2 cups wheat flour;
- 1 teaspoon of baking soda;
- 0.25 teaspoons of salt;
- 2 tbsp. spoons of sour cream;
- 1 tbsp. a spoonful of sugar.
For filling:
- 4 sweet and sour apples;
- 2 p. tablespoons of sugar;
- 1 tbsp. a spoonful of lemon juice.
Mash cottage cheese with eggs, sugar, salt and soda. Add sour cream, add sifted flour in portions. Knead a light dough. If it turns out to be thin, add more flour. Place the dough on a floured board. Roll a sausage out of it, cut into pieces. Roll each piece into a flat cake about 6 mm thick.
Prepare the filling. Peel the apples, remove the core, grate. Combine applesauce with lemon juice and sugar and stir. Fill the pies with apple filling and pinch the edges carefully. Heat unscented vegetable oil in a skillet and place the patties seam side down. After frying them on one side, turn them over and continue baking. Place the finished products on a plate covered with a paper towel. When the excess fat has been absorbed, transfer the tarts to a platter and serve.
