Mushroom paste is very healthy, tasty and nutritious. The paste contains extractive substances that stimulate the appetite and promote better gastric juice separation. For the preparation of pasta from mushrooms, it is recommended to use champignons, honey agarics or porcini mushrooms. Mushrooms can be fresh, dry, or pickled.

- 100 grams of dry mushrooms;
- 1 tablespoon flour;
- 150 grams of onions;
- 150 grams of sour cream;
- 3 tablespoons of butter;
- parsley;
- salt to taste;
- 3 cups mushroom broth.
Instructions
Step 1
Sort the dried mushrooms, rinse well in water, as there may be dust on them. Soak the washed mushrooms in warm water for 4-5 hours. It takes about 1 hour to cook the mushrooms in the same water in which they were soaked.
Step 2
Strain the broth. Mushrooms mince or grind in a blender.
Step 3
Chop the onions, fry in a pan until golden brown. Pass the fried onions through a meat grinder or chop in a blender.
Step 4
Fry the flour in butter until light brown. Dilute with warmed mushroom broth and cook over low heat for 10-15 minutes.
Step 5
Add cooked mushrooms and onions to the broth. Mix. Salt.
Step 6
Add sour cream and cook over low heat to prevent curdling.
Step 7
Add finely chopped parsley, cook until the paste is smooth, stirring constantly with a spoon.
Step 8
Serve hot mushroom pasta with potato or vegetable cutlets, potato casserole, meat dishes, cereals, poultry dishes. You can also serve mushroom pasta as a separate dish!
