A hearty dish from Germany. This recipe is common in the federal state of Saarland. Potatoes there are a favorite product and are used in a wide variety of dishes, and potato dumplings are considered a typical dish in the diet of local residents.
Ingredients:
- 200 g minced pork (or minced meat from different types of meat);
- 500 g of cooled potatoes (preferably boiled the day before);
- 500 g raw potatoes;
- 2 chicken eggs;
- 30 g pork fat;
- 100 g butter;
- 1 onion;
- 100 g flour;
- a bunch of young green onions;
- bulk bunch of parsley;
- nutmeg;
- ground black pepper;
- 4 tablespoons bread crumbs;
- 3 tbsp flour for rolling out dough;
- salt.
Preparation:
- Peel and mash the potatoes boiled the day before. Grate raw peeled potatoes on a fine or medium grater. Transfer the raw potatoes to cheesecloth and squeeze the juice into a mug. We still need it.
- Mix raw and boiled potatoes in a bowl, break eggs, add flour, salt and a pinch of nutmeg. Take the juice squeezed from the potatoes, pour into another bowl from the starch that has settled and pour into the potato dough. Put the dough in the refrigerator.
- Rinse the onion and parsley and chop finely. Chop the bacon and melt in a hot frying pan. Fry the onion in it until delicious golden brown. Add chopped parsley, simmer for about 5 minutes. Mix the fried greens with the minced meat, season with black pepper and salt.
- Sprinkle flour on a board, form a thick rope from the dough, then divide it into 8 equal parts. Flatten the juices a little. Spread the minced meat into pieces of dough and mold them into dumplings.
- Boil water in a large saucepan, pre-salt. Reduce heat and gently place dumplings in water. Cook for about 25 minutes. Important! Water should not boil! Otherwise, the dumplings will fall apart.
- Cut the green onions into neat slices. Melt the butter, fry the breading in it until golden brown, add the onion and remove from heat.
- Use a slotted spoon to remove the dumplings from the pan. Season with hot sauce, sprinkle with chopped onions.
