It is necessary

  • - 400 ml cream,
  • - 50 ml of milk,
  • - 3 egg yolks,
  • - 100 g of sugar,
  • - 1 tbsp. a spoonful of brandy,
  • - 50 g of dark chocolate.

Instructions

Step 1

Melt 50 grams of dark chocolate (preferably 75% cocoa) with 50 ml of milk.

Step 2

Rinse the eggs and separate the yolks from the whites. In a bowl of yolks, add sugar (plain or brown to taste), stir, but do not beat. Combine the yolk mass with melted chocolate, put on fire and cook until thickened (do not boil). Remove chocolate from heat and cool. To cool down faster, you can put the container with the chocolate mass in cold water.

Step 3

Whisk the cream until peaks. When whipping, add 1 tablespoon of cognac to the cream (you can substitute rum for cognac if desired) to enhance the chocolate flavor.

Step 4

Combine the cooled chocolate mass with the whipped cream as gently as possible. Pour the resulting mixture into a container and place in the freezer. Take out ice cream every 60 minutes and stir. During freezing, you need to mix the ice cream 3-4 times.

Step 5

After 3-4 hours, the chocolate ice cream is ready. Take it out of the freezer, place it in the portioned bowls, garnish with chocolate chips, chopped peanuts, pistachios, or simply pour it over with delicious syrup and serve.
