To make homemade melted cheese with champignons, you will need the following products:

  • Homemade cottage cheese - 0.5 kg
  • Champignons - 200-250 g
  • Chicken egg - 2 pcs.
  • Sour cream (preferably homemade) - 2 tablespoons
  • Butter - 50 g
  • Salt (preferably finely ground) - about 2/3 teaspoon
  • Baking soda - about 2/3 teaspoon
  • Greens (dill and parsley) - 1 small bunch
  • Garlic - 1-2 cloves

Champignons for processed cheese should be chosen smaller, white, without dark plates on the inside of the cap. Before cooking, they should be washed, scalded with boiling water, lightly fried in vegetable oil, salt and pepper to taste. Allow to cool to room temperature, chop finely and set aside.

To prepare the cheese mass, you will need two pans: a large and a small one. Put some water in a large saucepan and put it on fire. Processed cheese should be cooked in a water bath.

Put cottage cheese in a small saucepan, break the eggs, add sour cream, softened butter, soda and salt, beat it all with a blender, put it in a water bath and cook the cheese mass, stirring constantly, until it becomes completely homogeneous and viscous.

Add finely chopped mushrooms and finely chopped greens to the melted cheese mass. To enhance the piquancy, you can add 1-2 cloves of garlic, crushed in a garlic press. Beat the whole mass again with a blender.

Pour the finished melted cheese into a storage container. It can be an ordinary glass jar. Small, wide-necked jars with a screw cap work well.

After the cheese has cooled to room temperature, you can put it in the refrigerator. The cheese is ready to eat. It can be spread on bread, prepared various sandwiches with it, added to spaghetti.

Instead of mushrooms, you can use ham as a filler, you can also add a pinch of cumin during cooking. Homemade processed cheese is an excellent "lifesaver" for a quick and high-calorie snack. And the taste of this homemade product will appeal to members of the whole family.
