Khachapuri is considered an original Georgian dish. However, due to their taste and nutritional value, these cakes have become a part of our daily life. Of course, it is better to cook them yourself, because only in this case you can be sure of the safety of the composition.
Georgian khachapuri has been baked since the Middle Ages. The recipe was passed from village to village, in each area the recipe changed slightly. The shape of the finished khachapuri also changed - from round to square. However, Georgian bakers say that the main thing in khachapuri is not the filling or the way of baking, but a warm heart and skillful hands.
This recipe for khachapuri in 10 minutes is also called in Tbilisi, because it was in this area that it got its distribution.
To prepare 9 khachapuri, we need:
- Wheat flour - 3 cups (2 for dough, 1 for sprinkling);
- Chicken egg - 2 pcs. (1 for the dough and 1 for the filling);
- Kefir - 1 glass;
- Salt - 1 tsp;
- Sugar - 1 tsp;
- Baking soda - 0.5 tsp;
- Vegetable oil - 1 tablespoon;
- Hard cheese - 400 g;
- Butter - 50 g.
Preparation
Break one egg into a bowl, add kefir, vegetable oil, salt, sugar there. Mix thoroughly until smooth.
Sift two glasses of flour into the resulting mixture and pour soda.
We knead the dough. It should be soft and slightly sticky to your hands. Do not add a lot of flour, otherwise the khachapuri will turn out tough. Cover the finished dough with a paper napkin and leave to stand for a while.
At this time, we make the filling. Rub the cheese on a coarse grater and mix with the second egg. The filling is ready.
Roll out the dough into a sausage and divide into 9 parts. We make a non-thin cake from each part, it should not break when there is a filling inside. Put the filling in the center. We collect the edges of the cake so that we get a bag and mold it well.
Turn the bag over and roll it a little with a rolling pin, turn it over again and roll it on the other side too.
Khachapuri are baked in a hot frying pan without oil, fried on both sides until golden brown. Ready, still hot khachapuri are immediately greased with butter.
You can serve khachapuri as an independent dish, you can eat them with tea or juice. You can use them as a side dish for meat dishes, or you can simply eat them with herbs and vegetables. In any case, you will enjoy this wonderful dish.
