Under the mysterious word "Ebelskivers" are lush Danish pancakes, which, however, we will perform in the American manner - with the addition of peanut butter!
It is necessary
- - 2 cups flour;
- - 3 tsp Sahara;
- - 2 tsp baking powder;
- - 0.5 tsp salt;
- - 4 large eggs;
- - 2 cups of milk;
- - 60 g butter;
- - 1 cup of creamy peanut butter
- - 1 cup raspberry jam.
Instructions
Step 1
Sift flour with baking powder. Add sugar, stir.
Step 2
Melt the butter in a water bath or microwave and cool. Divide the eggs into whites and yolks.
Step 3
Mix peanut butter with a mixer with yolks, melted and cooled butter, milk and vanilla until smooth.
Step 4
Mix the peanut mixture with the flour. The dough will be rather patchy.
Step 5
Beat the whites thoroughly and mix into the dough, first adding a third and mixing, and then the rest of the protein mass.
Step 6
Grease a pan for making pancakes. Put a spoonful of dough in each cavity, in the middle - a little filling from your favorite jam (in this case, raspberry jam), and on top another spoonful of dough. Fry for about 4 minutes over medium heat (baking should be golden brown), then turn over and fry for about 3 more minutes. To serve, sprinkle with icing sugar if desired.
