Step 1

First you need to cut the cabbage. Classic cookbooks advise you to cut it into checkers. You can take any oil for frying, the main thing is that it is vegetable and suitable for frying. If the oil has a pronounced taste, then this taste will be felt in the cabbage. Pour oil into a skillet and heat well.

Step 2

Place the cabbage in a skillet and let it cook a little on one side. Using two scoops or spoons, gently stir the cabbage, turn it over and fry the other side as well. This should be done on maximum heat, without leaving the stove, so that the cabbage does not burn.

Step 3

As a result of roasting, the cabbage acquires a beautiful golden color, but it is still far from being fully cooked. Reduce heat. If there is little oil left in the pan after frying, add a little more. The degree of oil absorption in cabbage depends on its variety. Cover the skillet with a lid and simmer over low heat for 20 minutes.

Step 4

If the cabbage is young, the stewing time can be shortened to avoid porridge. You may have noticed by now that no salt or spices have been mentioned in the recipe so far. And rightly so, you need to add them to the dish literally 5 minutes before cooking.

Step 5

Open the lid, salt and pepper the cabbage. Garlic lovers can add this too. Stir the contents of the pan, for flavor you can put a piece of ghee, cover and let it sweat a little more. Sprinkle with herbs when ready-made fried cabbage.
