Croquettes are made from minced meat, which is based on the delicious meat of a young rabbit. Boiled carrots, a little smoked bacon and spices are added to the rabbit mince. All this makes the dish unusual and interesting. Combines with any side dish.

- - 2 eggs;
- - 150 g of lard;
- - 200 g of carrots;
- - 60 g of nutmeg;
- - 90 g breadcrumbs;
- - 60 ml. olive oil.
Instructions
Step 1
The rabbit should be chosen so that we have one large, but young rabbit for the dish. It is necessary to butcher the rabbit, separating all the meat from the bones. Cut the meat into small pieces.
Step 2
Cut the smoked pork lard into small slices, divide the boiled carrots into oblong pieces and pass everything together with the rabbit meat through a meat grinder.
Step 3
Beat the eggs, add salt, nutmeg (chopped and pre-ground), black pepper (ground) and bread crumbs to them.
Step 4
Combine beaten eggs with spices with minced rabbit meat. Mix thoroughly until smooth.
Step 5
Heat a skillet with olive oil and fry on all sides until the croquettes are lightly browned.
