  • - 70 g of dry porcini mushrooms;
  • - 2 cloves of garlic;
  • - 2 tablespoons of vegetable oil;
  • - 1/2 bay leaf;
  • - green onions;
  • - large frozen (fresh porcini mushroom);
  • - salt
  • For egg noodles:
  • - 200 g flour;
  • - an egg;
  • - 50 ml of water;
  • - salt
  • For lean noodles:
  • - 80 g of water;
  • - 1, 5 glasses of flour;
  • - 1/3 teaspoon salt

Instructions

Step 1

Rinse the dried mushrooms thoroughly, changing the water several times. Soak in cold water for 15 minutes. Then pour the mushrooms with 2.5 liters of water, cook over low heat for about 40 minutes.

The porcini broth turns out to be rich, rich, brown in color with a unique aroma.

Step 3

Add bay leaf and finely chopped garlic 10 minutes before the end of boiling. Strain the broth.

Step 4

Make noodles. Knead a stiff elastic dough. Do not forget to add some salt to it. To swell the gluten, let the dough stand for 25-30 minutes, covered with cellophane or a bowl.

Roll out and cut into thin noodles. In this case, egg noodles are used, but nothing prevents you from preparing a special dish with lean noodles, the dough for which is kneaded only in water.

Dry the noodles lightly (about 10 minutes) and cook in plenty of salted water, 7-10 minutes.

If there are too many prepared noodles, sift them through a colander or sieve, get rid of excess flour and store in a plastic (paper) bag.

Coarsely chop fresh or frozen mushrooms and fry in vegetable oil. Salt. Finely chop the green onion.

Step 9

Arrange the boiled noodles on plates, pour over the mushroom broth. Add the sautéed mushroom and chopped onion.

Step 10

For decoration and for the sake of a crisp feeling, place a fresh mushroom on top or, if not in season, freshly frozen.
