Lemonema is a very juicy and tender fish. A feature of chopped cutlets is that you do not need to use a meat grinder to prepare minced meat, this reduces labor costs and allows you to keep the fish more juicy than in minced meat.

- • Onion - 1 head
- • Carrots - 1 piece
- • Mayonnaise - 4 tablespoons
- • Sour cream - 4 tablespoons
- • Egg - 1 pc.

Instructions
Step 1
We rinse the fish well, then use a paper towel to get rid of excess moisture. Butchering - separating the fillet from the bones. The skeleton of a lemonema has few bones - a ridge and a few thin bones along the abdomen. Cut into 1 * 1 cm cubes with a knife. Put the prepared fish in a bowl.
Step 2
Peel the onions and carrots. Finely chop the onion, rub the carrots on a coarse grater. Add to the minced meat. Cutlets will be prettier and healthier if you add fresh herbs to them: onion feathers, parsley or dill.
Step 3
Add 4 tablespoons of mayonnaise and 4 tablespoons of sour cream to the minced meat. Thanks to this, the cutlets acquire pomp and juiciness.
Step 4
The next step is to salt the minced meat and add spices to taste (pepper, marjoram, basil).
Step 5
Add 1 raw egg to the minced meat. Knead everything well with a spoon.
Step 6
Next, add semolina to the minced meat - how much it will take. Now we knead the minced meat with our hands. The consistency of the minced meat should not be very steep.
Step 7
We form cutlets, roll in breadcrumbs, fry in vegetable oil in a pan on both sides until golden brown - 3-5 minutes on one side, 3-5 minutes on the other side, but already under a closed lid.
