It is necessary
- - shortbread cookies - 100 g;
- - butter - 80 g;
- - hazelnuts - 35 g;
- - walnut - 40 g;
- - milk - 200 ml;
- - cream 30-33% - 200 ml;
- - orange peel - 2 teaspoons;
- - sugar - 60 g;
- - egg yolk - 4 pcs.;
- - corn starch - 30 g;
- - dark chocolate 70-80% cocoa - 150 g.
Instructions
Step 1
After placing shortbread cookies in a blender bowl, grind them, then combine with finely chopped nuts. Then add melted butter to the resulting dry mixture. Mix everything as it should. Thus, the basis for the future chocolate-orange cake "Mon Cher" is obtained.
Step 2
Set one and a half tablespoons of the base aside for a while, and place the rest on a round baking dish lined with parchment paper. Gently tamp the oily-sand base, send it to cool in the refrigerator.
Step 3
Combine the grated orange zest with cream and milk. Put the resulting mixture on the stove, bring to a boil over very low heat, then set aside until it cools.
Step 4
Whisk raw egg yolks with granulated sugar until fluffy white foam. Continuing to beat, add cornstarch and warm liquid milk mixture to the resulting mass. Add the latter in a thin stream.
Step 5
Place the resulting mixture in a suitable sized saucepan and place it on the stove. Stirring continuously, bring the mixture to a boil, then beat thoroughly for 2 minutes, that is, until it becomes thick.
Step 6
Add pieces of dark chocolate to the resulting creamy mass. Stir everything until the added component melts.
Step 7
After cooling the mixture, transfer it to a chilled sand base and flatten. Decorate the treat with the remaining cookie paste. After holding the dish in the refrigerator for 6-7 hours, you can treat your loved ones to it. Mon Cher chocolate-orange cake is ready!
