Manty is a traditional Uzbek dish similar in appearance to large dumplings. They are not boiled in water, but steamed, in a special saucepan - a mantool. If there is no such pan, cook the manti in a regular double boiler.

It is necessary

  • For the test:
  • - 1, 5 glasses of flour;
  • - 1 glass of warm water;
  • - 1 egg;
  • - 1 tsp salt.
  • For filling:
  • - 300 g of lamb or beef;
  • - 2 tbsp. vegetable oil;
  • - 1 potato tuber of medium size;
  • - 4 onions;
  • - 1/2 tsp ground black pepper;
  • - 1 tsp salt;
  • - 1 tsp cumin.

Instructions

Step 1

Prepare the dough. Pour flour into a bowl, salt it. Make a well in the flour, pour in the egg and water. Mix everything well with a fork, and then knead the dough with your hands. The longer you knead it, the easier it is to sculpt manti from it.

Step 2

Wrap the prepared dough with plastic wrap and let it sit for 10-20 minutes. Prepare the filling. To do this, finely chop the meat with a knife. Peel and finely chop the onion.

Step 3

Place the onion in a bowl, add the spices, stir and let the mixture stand for a while. Peel and finely chop the potatoes or grate them on a coarse grater. Add the spiced onion to the meat, put the potatoes, pour in the vegetable oil and mix everything well.

Step 4

Sprinkle flour on the table and place the dough on top of it. Roll a sausage out of it and cut into small pieces about the size of a walnut. Form balls from the pieces, roll them into thin cakes about 10 centimeters in diameter and about 3 mm thick. Place a tablespoon of minced meat on each tortilla. If you wish, you can put a small piece of bacon on top.

Form the manti, for this, connect the opposite edges of the cake, pinch them. Then pinch the remaining two semicircles. The end result is an almost square pouch. Connect in pairs the four ends of the resulting bag and give it a rectangular shape.

Step 6

Fill the bottom of the steamer with boiled water and put it on fire. Lubricate the tiers of a double boiler with vegetable oil and place the manti on them. When the water boils, place the decks in a double boiler. Manti are cooked for 40 minutes under a closed lid with boiling water.

Step 7

Put ready-made manti on a dish, pour over them with butter, sprinkle with pepper, chopped herbs and serve.
