The combination of several types of flour makes these muffins very healthy, and also gives a unique texture and flavor!
It is necessary
- - 240 ml of wheat flour;
- - 80 ml whole grain flour;
- - 80 ml of corn flour;
- - 80 ml of oatmeal;
- - 60 ml of sugar;
- - 2 tsp baking powder;
- - 0.25 tsp salt;
- - 0.25 tsp soda;
- - 240 ml of kefir;
- - 80 ml maple syrup or liquid honey;
- - 2 eggs;
- - 110 g butter;
- - 100 g of dried fruits.
Instructions
Step 1
Preheat the oven to 200 degrees. Grease muffin molds with butter and sprinkle with flour or line with special cuffs.
Step 2
Melt the butter in the microwave or water bath and let cool slightly.
Step 3
While the butter is cooling, sift a mixture of three flours with baking powder, baking soda, and salt into a large bowl. Add oatmeal and sugar and mix thoroughly.
Step 4
In a separate container, using a mixer, beat the kefir with the addition of honey or maple syrup, eggs and cooled melted butter.
Step 5
If using large dried fruits such as dried apricots or prunes, chop them finely with a knife.
Step 6
Pour the mixture of liquid ingredients to dry and mix quickly without zeal with a spatula or fork. Keep in mind that if you knead too long and thoroughly, the muffins will be very heavy and will not rise at all! Therefore, ignore the remaining small lumps. Finally, add the dried fruit mixture and stir once more so that they are more or less evenly distributed in the dough.
Step 7
Pour into molds and place in a preheated oven for 18-20 minutes. First let the finished muffins cool slightly in the tins, and then cool completely on the wire rack.
