Zrazes are hearty stuffed patties that can be prepared with a variety of ingredients. The most popular are meat and potato zrazy; these cutlets are also prepared from fish with the addition of vegetables, cheese, eggs and other ingredients. Let's prepare potato zrazy with mushrooms.
Mushrooms can be a good filling for preparing zraz, so in this recipe you can use different types of mushrooms: champignons, oyster mushrooms or any forest mushrooms. Zrazy can be baked in the oven, as well as fried in a pan.
To prepare potato zraz with mushrooms, you will need the following products:
- potatoes - 6 pcs.;
- onions - 2 pcs.;
- chicken egg - 1 pc.;
- garlic - 2 cloves;
- soda - 0.5 tsp;
- sugar - 1 tsp;
- flour - 5 tbsp. l.;
- mayonnaise - 1 tbsp. l.;
- mushrooms - 500 g.
It is best to start cooking with the filling: wash the onions, peel and cut into pieces, and then sauté in a frying pan in a little oil. In the meantime, chop the garlic and add it to the onion.
For this recipe, it is best to take canned mushrooms. Rinse the mushrooms from the jar, try to assess the taste, quality and salt level, then chop finely on a cutting board. Add mushrooms to a skillet with onions and garlic and sauté over low heat.
Boil the potatoes in their skins, and then peel and mash until a thick puree, break an egg into it, add sugar and soda, quenched with vinegar. If you boiled jacket potatoes in salted water, then you do not need to add salt in the future. Pour in flour, and then knead the dough well with your hands and divide it into small pieces, which should be rolled into flat cakes.
After the mushrooms with onions and garlic are fried, turn off the heat and add mayonnaise to the mushrooms.
Now you can start forming the zrazy: put the filling on a small cake in the very middle, and then gently shape the zrazy, pinching the edges to the center. In the future, zrazy can be fried in a pan or baked in the oven until cooked.
