Step 1
The main condition for tasty zraz is well-cooked mashed potatoes. For mashed potatoes, it is best to use yellow potatoes that boil well. Wash, peel and chop the potatoes and carrots. Cover with water, bring to a boil, and then reduce heat. Cook the puree for about an hour, then add a little salt.
Step 2
While the mashed potatoes are being prepared, you need to prepare the mushroom filling for the potato zraz. Peel the onion and chop finely. Wash the mushrooms and also chop finely enough. Stew champignons with mushrooms until tender. At the end of cooking add salt and some powdered garlic. Then you must definitely put the mushrooms and onions in a colander. This will drain the excess fluid.
Step 3
When the vegetables for the puree are ready, you need to drain all the water from them. To be sure, they can also be put in a colander, and then back into the pan. Mash mashed potatoes and carrots. It is important that it turns out to be homogeneous, without whole pieces. When the puree has cooled down enough, you need to dump it on a floured table or a special dough sheet. Pour flour into it, make an elastic dough.
Step 4
Take a small piece of the total mass of potato dough and make cakes. In the center of each you need to put the filling, close the edges and form zrazy. All zrazy also need to be rolled in flour so that they are not sticky.
Step 5
Fry potato zrazy with mushrooms in a pan with butter. Fry on each side for about 3 minutes, so that the zrazy are golden brown and appetizing.
