Minced meat for this dish is never scrolled in a meat grinder, but is chopped with a knife. The shape of manti can also be different, but more often it is round. The dish is cooked only for steam in a special dish - a mantool. The most delicate and useful are pumpkin manti.

It is necessary

    • For the test:
    • 600 g sifted flour;
    • a glass of milk;
    • 2 eggs;
    • 10 g of salt.
    • For minced meat:
    • 1.5 kg of ripe pumpkin;
    • 250 g fat tail fat;
    • 4 onions;
    • 10 g coriander seeds;
    • 15 g cumin;
    • ground black pepper
    • salt to taste;
    • a pinch of basil.

Instructions

Step 1

Break eggs into a bowl, pour in cold water, add salt and stir everything until it is completely dissolved. Add flour and gently knead a sufficiently tough dough. It must be kneaded for at least 20 minutes. After that, wrap the dough in plastic wrap or put it in a bag and leave it for 40 minutes. During this time, it will become elastic.

Step 2

Peel the pumpkin and cut into small cubes, chop the fat tail and onions in the same way. The more onions, the juicier the manti will be. Combine all the ingredients, pepper and salt, season with coriander and cumin, grind them first. Add basil to taste and stir gently.

Step 3

Roll a sausage with a diameter of 3-4 centimeters from the dough, cut it into pieces 2 centimeters thick. Use a rolling pin to roll each piece of dough into a very thin tortilla. You can roll out the whole dough at once without cutting it into pieces, and then cut it into squares of the required size, but it will be more difficult to achieve the desired thickness.

Step 4

Place a spoonful of ground pumpkin in the middle of each batter. Blind the manti, to do this, pull two opposite corners of the dough to the middle, connect them to each other, overlapping each other. Similarly, close other opposite corners. The result should be a square or rectangle. Now you need to pull to each other and connect two adjacent corners of the dough, then a similar operation must be done with two other adjacent corners.

Step 5

Place the cobbled manti on the mantle sheets. Coat them with oil in advance. Leave a small distance between them. Steam for 45 minutes. Always serve manti hot, preferably in deep bowls, pouring over meat broth. Don't forget to sprinkle with herbs and ground pepper.
