Summer is not only a time of heat and vacations, but also a time of all kinds of berries and fruits. Treat yourself and bake a plum curd pie on a warm summer day. This dessert has an amazingly delicate taste.
It is necessary

- - egg yolks - 2 pcs;
- - sour cream - 1 tablespoon;
- - zest of half a lemon;
- - baking powder for dough - 0.5 teaspoon;
- - salt - a pinch;
- - butter - 120 g.
- For filling:
- - plum - 700 g;
- - low-fat cottage cheese - 500 g;
- - egg whites - 2 pcs;
- - egg yolks - 2 pcs;
- - starch - 1 tablespoon;
- - butter - 50 g;
- - sugar - 100 g;
- - apricot jam - 50 g.

Step 1
The first thing to do is prepare the dough for the future plum cake. To do this, combine softened butter, sour cream and granulated sugar. Beat the mixture. Then add lemon zest and egg yolks to it. Introduce the second gradually. Mix flour with salt and baking powder, pass through a sieve and add to the bulk. Knead the dough and place it in the cold for about half an hour.
Step 2
Cover a round springform cake tin, about 25 centimeters in diameter, with a sheet of parchment and place the chilled dough on top of it. Roll it out and shape the sides for the cake. Also, do not forget to chop the dough in several places with a fork. Rinse the plums thoroughly, cut into halves and remove the seeds. Place two thirds of all fruits in a mold.
Step 3
It's time to prepare the filling. To do this, mix egg yolks, pre-melted butter, starch, granulated sugar and cottage cheese. Mix everything thoroughly, then add beaten egg whites to the resulting mass.
Step 4
Place the resulting curd filling on the dough. Decorate the top with the remaining plums. Just first, cut them with longitudinal cuts and unfold them like a fan. Then heat the apricot jam and brush over the fruit.
Step 5
Preheat the oven to 180 degrees and place the dish in it. Cook it for 70 minutes. If you wish, you can decorate the finished baked goods, for example, with powdered sugar. Plum cake with cottage cheese is ready!
