To prepare Welsh Reibit, you will need the following foods:

  • butter 60 g;
  • beer 100 g;

It is better to use special white bread with the marking - for making toasts. It must be cut into triangles or squares (any shape) and fried on both sides in a toaster, oven, or skillet without oil. It is worth removing the crusts from the bread in advance, if any (then the amount of bread will be required more than indicated in the recipe).

Grate the cheese on a fine grater. Melt the butter in a water bath, add grated cheese, beer, then season with red pepper and mustard. You need to stop heating as soon as the butter melts. Beat the yolks into a foam using a mixer or fork and add, stirring thoroughly and quickly, to the melted butter. Reheat over the fire, but do not bring to a boil.

The resulting mass, cooling a little, will begin to thicken, then it should be spread on croutons. Put them on a baking sheet and put in a preheated oven up to 150 ° C for 3-5 minutes, only then the Welsh rebit can be considered ready and should be immediately served.
