    • for pasta:
    • 450 g wheat flour
    • 4 eggs
    • 1 tsp salt
    • 2 tbsp. tablespoons of olive oil
    • 2 tbsp. spoons of water
    • for the sauce:
    • 1 tbsp. a spoonful of olive oil
    • 2 cloves of garlic
    • 350 g smoked ham
    • 225 ml fresh cream or sour cream
    • 4 egg yolks
    • 75 g Parmesan cheese

Instructions

Step 1

Sift the flour on the table in a small chunk. Make a large indentation in the center and hammer in the eggs.

Step 2

Add salt, water and oil and, starting from the edges, stir the mixture and replace the dough. Knead the dough for 12-15 minutes. Then roll into a kolob and wrap in plastic wrap.

Step 3

Leave the dough in the refrigerator overnight.

Step 4

Divide the finished dough into 4 parts and roll out into thin layers. Roll up the layers and roll out again, no more than 2 mm thick.

Step 5

Sprinkle the layer well, roll it up and cut it across into a paste 2-3 mm wide.

Step 6

Put the pasta in boiling water and cook for 5-7 minutes. Place the tagliatelle in a colander.

Step 7

Make Carbonara sauce. To do this, heat the oil in a small saucepan.

Step 8

Peel the garlic and pass through a press.

Grate Parmesan on a fine grater.

Step 10

Cut the ham into small cubes.

Step 11

Add the garlic to the oil and cook for 1 minute.

Step 12

Add the ham to the garlic and cook for another 3-4 minutes.

Step 13

Whisk in the yolks and cream. Place in a water bath and stir quickly to add the ham.

Step 14

Heat the sauce until thick and not boil. Remove from heat and stir in the parmesan.

Step 15

Place the hot tagliatelle on a platter and pour the sauce over the top.
