Poke is a traditional Hawaiian dish that is gaining popularity around the world. Its main feature is raw fish, cut into cubes, and rice, seasoned with a special sauce. Today restaurants, having picked up the fashionable gastronomic trend, offer a lot of variations of poke, with the addition of fried fish, peas, vegetables and even fruits, but still the classic poke recipe remains the most popular among gourmets and connoisseurs of healthy food.

- - 200 g salmon or tuna fillet
- - 1 glass of sushi rice
- - 4 tablespoons of rice vinegar
- - 1 tablespoon sugar
- - 0.5 teaspoon of salt
- - 2 tablespoons mirin (or dry white wine)
- - iceberg lettuce
- - avocado
- - cucumber
- - soy sauce
- - orange
- - sesame
- - greens
Instructions
Step 1
Rinse the rice three times under cold running water. Pour 1, 5 glasses of water and cook for 50 minutes over low heat.
Step 2
Prepare the sauce with 4 tablespoons of rice vinegar, 1 tablespoon of sugar, 0.5 teaspoon of salt, 2 tablespoons of mirin and half an orange juice. Mix all the ingredients well and let the sauce sit for 15 minutes. Season the finished rice with sauce and stir three times, the first time after dressing, the second time after 10 minutes and the third time after 20 minutes. The rice can then be used for poke.
Step 3
Cut the fish fillet into 1 cm cubes and place in a deep plate.
Step 4
Finely chop the lettuce leaves, cut the avocado and cucumber into strips.
Step 5
Combine fish, salad, avocado and rice. Add soy sauce, herbs and sesame seeds. Serve warm or at room temperature.
