"Stollen" - German Christmas cake made from yeast dough. Traditionally, it is baked in advance (one month before Christmas) and can be stored for up to six months. "Stollen" is baked with nuts, candied fruits, raisins and poppy seeds. In addition, each baker adds their favorite spices to the dough, so the muffins vary in flavor.

It is necessary

    • 1.5 kilograms of flour (approximate amount);
    • 400 ml. milk;
    • 500 g butter;
    • 100 g yeast;
    • 700 g raisins;
    • 500 g sweet almonds
    • you can add 5 pieces of bitter almonds to it;
    • 50-100 g of candied orange fruits;
    • 50-100 g of candied lemon;
    • juice and zest of a small lemon;
    • 1 tsp salt;
    • vanilla sugar;
    • cinnamon;
    • rum or cognac;
    • For impregnation and dressing:
    • - 200 g of butter;
    • powdered sugar.

Instructions

Step 1

Pre-soak the raisins in cognac (or rum) and remove the food for Stollen preparation from the refrigerator in advance. They should warm up to room temperature.

Step 2

Heat the milk slightly and dilute the yeast with a little sugar in it. Sift flour, add half to milk and make a dough. Put it in a warm place for thirty minutes. As soon as the dough increases in volume, start kneading the dough.

Step 3

Add the rest of the sugar, flour, softened butter and salt to the dough. Knead the dough and let it sit. At this time, cut the almonds not very finely; squeeze raisins; Peel the lemon and squeeze the juice.

Step 4

Knead the dough and add raisins, lemon zest and juice, candied fruits, nuts, vanillin and cinnamon to it. Add flour if necessary and knead the dough thoroughly again. It should be heavy and dense. Set the dough aside for three hours. During this time, it must be kneaded two or three times.

Step 5

Divide the cooked dough in half, form two oval loaves and transfer to a baking sheet. Make cuts along the entire length of the loaves with a sharp knife on the side. To keep the "Stollen" in shape, make rims from foil. To do this, fold the foil several times, hold it together and arrange around the cupcakes. In size, the rims should be slightly larger than the loaves. Leave the muffins on a baking sheet for thirty minutes to approach, and then put in an oven preheated to 200 degrees and bake for 15 minutes. Then lower the temperature to 170 degrees and continue baking for another 40 minutes.

Step 6

Let the finished muffins cool. Melt the butter and brush over the Stollens very well. It is necessary to literally rub butter into the cake from all sides. Then generously sprinkle the baked goods with powdered sugar. The shape and white color of "Stollen" should symbolically resemble the newborn Christ wrapped in swaddling clothes.

Wrap the cupcake in foil and wrap in a large plastic bag. Store in a tightly sealed ceramic container or large saucepan.
