New Year's meringue cake is a truly festive dessert with an incredibly light and delicate taste. This cake can be garnished with fruits, berries, cream, or buttercream.

It is necessary

  • - 5 egg whites;
  • - 400 ml cream, 35% fat;
  • - 100 g of dark chocolate;
  • - 100 g of roasted hazelnuts;
  • - 25 g of icing sugar;
  • - 265 g of sugar;
  • - 1 teaspoon of apple cider vinegar;
  • - a pinch of salt.

Instructions

Step 1

First, preheat the oven to a temperature of 150 degrees.

Then we start cooking meringue cakes. To do this, grind 100 g of hazelnuts with 20 g of sugar in a blender. Next, in a separate bowl, beat 4 egg whites with a small amount of salt until a strong, stable foam is formed, then add 200 g of granulated sugar, 1 teaspoon of apple cider vinegar, without stopping whisking. When the mass becomes thick and dense, carefully mix the chopped hazelnuts into the whipped proteins.

Step 3

On parchment paper for baking, draw two circles with a diameter of about 20 cm, on which we spread the prepared cake dough. We place the baking sheet in the oven and bake the cakes for 20-25 minutes. After the specified time has elapsed, turn off the oven and, without removing the baking sheet, let the cakes cool slightly (about 10-15 minutes).

We take out the cooled cakes from the oven and again set it to warm up to 80 degrees. At this time, 25 g of powdered sugar are mixed with 25 g of sugar. Beat the remaining egg white with a blender, adding a pinch of salt and the prepared sugar mixture to it. This should be done until a thick and dense mass is formed.

On baking paper, draw Christmas trees, deer, snowflakes and other New Year's symbols, and then put it on a baking sheet. Place the whipped egg whites in a pastry envelope and squeeze them onto a baking sheet according to the stencils drawn.

Step 6

Place the baking sheet in the oven and bake the cake decorations for 1 hour. When ready, remove the baking sheet from the oven and let the meringue cool.

Step 7

Then you can start preparing the cream. To do this, melt the dark chocolate bar in a water bath and cool it down. In a separate bowl, beat 400 ml of cream, divide them into two equal parts, add one of which to the melted chocolate and beat again.

Step 8

It is necessary to collect the cake just before serving. Put one meringue cake on a wide dish, then grease it generously with creamy chocolate cream, and then cover with the second cake. Grease the top cake with whipped cream and decorate the cake with New Year's meringue figures, sprinkling with powdered sugar.
