    • Semolina pancakes:

    • butter (1/2 tablespoon);
    • salt to taste.
    • Spicy pancakes:
    • wheat flour (2 cups);
    • buckwheat flour (3 cups);
    • semolina (50 gr);
    • egg (3 pieces);
    • fresh yeast (25 gr);
    • milk (4 glasses)
    • water (1 glass).

Step 1

Prepare the right pancake pan. Lace pancakes are fried in thick cast-iron pans with a low side. Get yourself a separate inventory and only use it for baking. After making the pancakes, wipe the pan dry and set aside until next time.

Make pancake dough. Use not only wheat flour, but also buckwheat, add semolina, rice, millet. Feel free to experiment with different flavors and additives.

Boil the milk in a saucepan. Pour a measured amount of semolina into it. Stir constantly so that there are no lumps. Boil porridge, put butter in it and leave to cool in a cold place.

Combine flour with yolks and milk, salt. Put semolina porridge in the dough one spoon at a time and stir with a whisk. The mass should be smooth and fluid.

Spicy pancakes.

Pour semolina into boiling milk and cook thin semolina porridge. In another saucepan, boil buckwheat flour in boiling water, stir with a whisk so that the mass is free of lumps. Pour in a glass of wheat flour in a thin stream.

Cool the flour mass and put yeast in it. Let the dough rise. Wrap it with a whisk. Add loose yolks, milk and semolina into the dough. Fill in the remaining flour. 10 minutes before baking, carefully place the whipped egg whites and lightly stir the dough.

Put a frying pan on the fire and heat it up. Pour vegetable oil on it, when it gets hot, then pour the dough with a ladle.
