Ingredients:

  • 1 whole chicken;
  • 1 bunch fresh cilantro or parsley
  • 1 sweet red pepper;
  • 8 cloves of garlic;
  • 200 ml coconut milk;
  • 5 g butter;
  • 1 tablespoon olive oil
  • 1 red onion;
  • 3 tablespoons fresh ginger
  • ½ teaspoon chili pepper.

Preparation:

  1. Pour olive oil into a frying pan and throw in butter, put everything on the fire, stir and heat up strongly.
  2. Rinse the chicken under running water, then carefully remove the ridge from it.
  3. Grate the prepared carcass with pepper and salt, put in oil and fry well on both sides.
  4. In the meantime, you need to prepare all the other ingredients. Peel, rinse, chop and place onion, garlic, ginger and bell pepper in a blender. Add chili pepper and washed cilantro to the same. Kill everything until a paste with small pieces.
  5. Note that the chili pepper recipe requires only ½ part of a teaspoon, but this is if children are going to eat the dish. For adults, the amount of pepper can be significantly increased, focusing on your own taste preferences.
  6. Put the fried carcass on any plate for a while. And put the vegetable paste in the chicken oil, mix and heat. Then pour coconut milk into the vegetable sauce, mix everything and continue heating.
  7. Put the chicken in the coconut sauce, pour over the same sauce from all possible sides and simmer for about 45 minutes with the lid closed, periodically turning over and pouring the sauce over again. During cooking, the fried carcass will take an unsurpassed aroma, amazing juiciness and spicy taste from the sauce.
  8. Turn off the finished spicy chicken and leave it covered for 5-10 minutes, so that it rests a little. Then remove from the sauce, transfer to a dish, pour over the sauce again and serve with your favorite side dish. Note that boiled corn is perfect as a side dish. But this does not mean that traditional side dishes will not work. For this chicken, you can cook pasta and potatoes and your favorite salad of fresh vegetables.
