A very elegant cake with a rich nutty flavor to complete any festive meal!
It is necessary
- - 6 egg whites;
- - 2 tbsp. (in cakes) + 1 tbsp. sugar (in cream) "with a slide";
- - 2 tbsp. peanuts "with a slide";
- - 75 g of starch and wheat flour;
- - 120 ml of condensed milk;
- - 300 g butter;
- - vanillin on the tip of a knife;
- - 100-150 g of apple jam;
- - 2 tsp cocoa powder.
Instructions
Step 1
Heat the peanuts in a dry skillet or oven, stirring occasionally to prevent the nuts from burning. Then peel the kernels and place in the chopper bowl. Add a couple of teaspoons of total sugar (it acts as an absorbent) and turn the peanuts into flour.
Step 2
Mix peanut flour with plain flour, wheat flour, and starch.
Step 3
Preheat the oven to a temperature of 160 degrees. Prepare the baking sheet by lining it with parchment paper, on which, on the back, draw 3 circles in the shape of the cake.
Step 4
Whisk the whites until they reach steady peaks, then start adding sugar a little at a time until you have added all the remaining amount. Add nut and flour, and gently stir with a spatula from top to bottom.
Step 5
Lay out the dough, filling the drawn circles, and place in the oven for about 2 hours. The finished cakes should not be too dry or damp. After cooking, it is recommended to leave them for 12 hours without separating them from the paper.
Step 6
Boil 100 g of water and add 1 glass of sugar to it. Wait for the syrup to boil and add condensed milk. Reduce heat and simmer for about 10-12 minutes. Then remove the saucepan of syrup from the stove and cool.
Step 7
While the syrup is cooling, remove the oil from the refrigerator - we need it softened!
Step 8
Whisk the butter, pouring the sugar syrup into it in a tablespoon, into a fluffy light cream. Divide into 3 parts: leave 2 white, and add cocoa powder in a third.
Step 9
Let's start assembling the cake! We put the first cake on a dish and grease it with white butter cream, leaving a part for decoration. Then cover with a second cake layer and apply a layer of apple jam. Cover with the last, third, cake and grease it with chocolate cream!
Step 10
Decorate the sides with the remains of white butter cream and peanuts. If you still have some cream left, you can decorate the top of the cake with various patterns using a pastry syringe.
