Seafood has long become a common food for Russians, because you can buy them at the nearest store. From them, for example, you can prepare a light and healthy salad for dinner, which is also suitable for a festive table.

- For a salad with arugula and mustard dressing:
- arugula 2 bunches;
- seafood of your choice (shrimps are best);
- cherry tomatoes;
- garlic;
- olive oil;
- mustard;
- salt;
- parmesan cheese.
- For the Sea cocktail salad:
- seafood (frozen or canned);
- iceberg lettuce;
- eggs 2 pcs.;
- cucumber 2 pcs.;
- parsley;
- salt;
- mayonnaise or olive oil (your choice).
Instructions
Step 1
Make a light spicy salad with arugula and mustard dressing. For it, you can choose both a mixture of seafood (including mussels, squid, shrimp), and some king prawns. Rinse the arugula salad under cool running water, place on a clean towel and drain off excess moisture.
Step 2
Prepare seafood. Defrost the mixture or shrimp (the latter must first be peeled, leaving only the tip of the tail). Peel the head of garlic. Preheat a skillet with olive oil, add two or three cloves of garlic (you can chop with a knife).
Step 3
Fry the seafood in a skillet for three minutes, stirring constantly. The garlic will have time to give them its aroma, which will be perfectly felt in the finished dish.
Step 4
Prepare a dressing. Combine olive oil, three to four garlic cloves (minced) and a teaspoon of mustard. Wash the cherry tomatoes.
Step 5
Put the dried arugula in a deep bowl, cover with the dressing and mix thoroughly (it is better to do this with cooking tongs). Then add cherry (whole or halved), seafood, some salt and stir again.
Step 6
Divide the salad into bowls and sprinkle finely grated Parmesan cheese over each serving.
Step 7
Make the Seafood Cocktail Salad, which is a great combination of fresh vegetables and seafood. Hard boil the eggs and peel them. Wash the cucumbers, parsley. From the head of the iceberg, remove the top leaves and discard them, then disassemble it.
Step 8
Cut eggs and cucumbers into equal sized cubes, chop the parsley. Tear the salad with your hands into pieces about 3x3 cm in size.
Step 9
Prepare seafood. If you purchased fresh frozen ones, boil water in a saucepan, add a little salt and toss them there for literally three minutes. Canned seafood does not need additional processing, just drain the excess liquid from the jar.
Step 10
Take a deep bowl and mix all the ingredients in it: salad, cucumbers, eggs, parsley, seafood. Season with salt. If desired, you can add freshly ground pepper. Next, season the salad of your choice - with olive oil or mayonnaise. The first option will be less high in calories.
