Most often, herring is eaten in salted or pickled form. Fried herring recipes are rare, but this is a real delicacy with a delicate and mild taste. Fried herring tastes as good as other fish, while it has a number of advantages: when frying, there is practically no fishy smell, but useful substances are preserved.
Fried herring with mashed potatoes
To prepare fried herring with mashed potatoes as a side dish, you will need the following foods:
- fresh (or frozen herring) - 5 pcs.;
- eggs - 3-4 pcs.;
- 4 tbsp. milk;
- 2 tbsp. l. mustard;
- bread crumbs (to taste);
- greens (parsley, dill, etc.);
- vegetable oil;
- salt, pepper (to taste).
To make mashed potatoes:
- 500 g of potatoes;
- 200 ml of cream;
- 2 tbsp. l. mustard;
- salt, pepper (to taste).
First you need to disassemble the herring: cut off the fish's head, tail, fins, make a longitudinal cut and remove the insides. Dry the disassembled fish.
Make a milky mustard marinade. In a separate bowl, beat the eggs with the mustard, then gradually add the milk and continue to beat. This mixture must be seasoned with salt and pepper. Place the fish in this marinade and leave to soak for 60 minutes.
In the meantime, start preparing the mashed potatoes for the fish. Wash and peel the potatoes, cut into several pieces and cook until tender, about 20 minutes. Season with salt to taste. Bring the cream to a boil, mix with mustard. Drain the pot, then mash the finished potatoes and pour in the cream, pepper and salt. Stir the puree until smooth, try to keep warm.
Pour the breadcrumbs into a deep bowl. Put a couple of parsley sprigs in each herring and roll in breadcrumbs, and then fry in preheated vegetable oil in a pan. Fry the herring for about 5 minutes on each side.
Serve the cooked fried herring with warm mashed potatoes. Bon Appetit!
Vietnamese fried herring
Vietnamese fried herring will be an original dish. You will need:
- herring - 4 pcs.;
- 2 tbsp. l. soy sauce;
- garlic - 1-2 cloves;
- onions - 1 pc.;
- 1 tsp. grated ginger;
- chili pepper, salt (to taste);
- blender;
- grill.
For this dish, it is best to use herring fillet, in which carefully make small cuts with a sharp knife. In a blender, combine the garlic cloves, ginger, onion, chili and soy sauce and whisk until smooth. You now have a spicy paste that needs to be placed in the cuts on the herring.
Then let the fish soak in the paste for 15-20 minutes. It is necessary to fry such herring on the grill until ready. Vietnamese fried herring will have a spicy aroma and unusual taste.
