It is better to buy not frozen, but chilled fish. Fresh flounder should not have a pungent smell of iodine. In the purchased fish, make a V-shaped cut on the light side of the carcass and separate the head. Use a sharp knife to open the belly and remove all the insides. Cut off the tail, fins and carefully remove the skin.

Remove the skin with gloves so as not to injure your hands on the sharp thorns that are on it.

Rinse the cut fish with cold water.

Cooking baked flounder

Ingredients:

- flounder - 2 pieces (large);

- lemon - 1 piece;

- fresh tomatoes - 2 pieces;

- feta cheese - 4-5 pieces;

- vegetable oil - tablespoons;

- fresh dill - 1 bunch;

- salt, pepper and fish spices - to taste;

Squeeze the juice from the lemon, cut the tomatoes into thin slices, grate the cheese on a fine grater. Dry the prepared fish with a napkin, rub with salt, sprinkle with black pepper and place in a small saucepan and cover with lemon juice.

If there is caviar in the flounder, it is better to fry it separately in vegetable oil, so it will be tastier and will not crumble.

Place in a cool place to marinate the fish. Then start preparing a baking sheet to bake the flounder in the oven. Lubricate it with vegetable oil or cover it with cling foil. Place the fish on a baking sheet, brush with vegetable oil on top.

Place the tomato slices on the flounder and sprinkle with grated cheese on top. Place in a preheated oven for 30-40 minutes. Serve the baked fish on the table, sprinkle with dill.

Ingredients:

- flounder - 1 piece;

- smoked bacon - 2-3 strips;

- peeled peanuts - 3-4 tablespoons;

- lemon - 1 piece;

- cherry tomatoes - 3-4 pieces;

- olives - 4-5 pieces;

- olive oil 1-2 tablespoons;

- salt, pepper to taste.

Dry the cleaned and washed fish with a napkin, make transverse cuts, salt and pepper thoroughly. Remove the zest from the lemon, finely chop the parsley, stir and rub into the cuts on the flounder carcass.

Heat the vegetable oil in a skillet and fry the bacon strips in it. Then add the peanuts there and fry for another 5 minutes. Put the fried food on a platter, and in a frying pan, directly in the flavored oil, dip the flounder. Fry the fish until golden brown and turn gently. Place chopped cherry tomatoes and roasted nuts and bacon on the flounder. Add the olives and fry for another 10 minutes until the fish is done. Place the finished dish on a flat plate and serve hot.
