Fish pie is a good starter and main course. There are many recipes for its preparation, both in Russian and in foreign cuisines, which will diversify both festive and everyday tables.
It is necessary
- - 500 g flour;
- - 1 glass of milk;
- - 2 eggs and 1 yolk;
- - 70 g of butter;
- - 3 tbsp. l. Sahara;
- - a pinch of salt;
- - 200 g of red fish;
- - 100 g of rice;
- - 300 g of mushrooms;
- - 1 onion;
- - salt and pepper.

Step 1
Make red fish kulebyaka. Start by making the dough. Heat the milk on the stove, but do not bring it to a boil. Pour into a bowl and add a bag of dry yeast to it. Stir so that there are no lumps. Then melt the butter, add it to the milk. Pour in sugar and salt, pour in broken eggs. Pour flour gradually, two to three tablespoons, and mix thoroughly. The dough should be firm. Then cover the bowl with a towel and place in a warm place. If it is cold in your apartment, then install the dishes with the dough from a basin of hot water. Check the bowl about once an hour and stir the mixture. The dough should rise 2-3 times.
Step 2
Take care of the stuffing. Boil rice in salted water. Chop the onion, fry in a preheated pan with the addition of vegetable oil. Then cut the mushrooms - champignons or honey mushrooms. Add them to the onion and simmer until the water released from the mushrooms evaporates. Mix the onion-mushroom mass with rice, salt and pepper. The filling should be quite salty and spicy, as the dough will be bland.
Step 3
Divide the dough in two and roll out. Place the bottom of the future pie on a greased baking sheet. Spread the filling evenly over its surface. Cut salted or smoked red fish into thin slices. It is best to take salmon, but trout and pink salmon will do. Cover the filling with a layer of fish. Then place the second piece of dough rolled out on top, pinch the edges. Punch a hole in the middle of the cake for the steam to escape. Brush the top of the pie with whipped yolk. Place the baking sheet in an oven preheated to 180 degrees and bake for about half an hour. Time may vary depending on the size of the cake. You can check its readiness if you pierce it with a fork. It should be dry and free from sticky dough.
Step 4
Place the pie on a clean table or cutting board and cover with a towel before serving. Wait 10-15 minutes.
