Dungan noodles are a hearty and delicious oriental dish. A special feature of this dish is that it uses hand-made noodles. Either lamb or pork is taken as the meat component, and the choice of vegetables is truly diverse.
Dungan noodles
To prepare this delicious second course you will need:
- 800 g of beef;
- 2 kg of flour;
- onions - 5 pcs.;
- 100 ml of sunflower oil;
- garlic - 1 clove;
- 150 ml of vinegar (3%);
- 200 g of beef broth;
- 20 g of ground red hot pepper;
- 20 g of baking soda;
- salt (to taste).
Add flour and a little salt to boiled water, mix and knead the dough, which should be covered with a napkin and left to rise for 3-4 hours.
Make a water solution with baking soda and salt and brush the dough with it, stir and leave to come up for a while. After 10-15 minutes, moisten the dough with an aqueous solution and roll a loaf out of it. Stretch the ends of the loaf and fold it in a loop, and then twist it with a tourniquet. Continue stretching in this way until the threads are the same thickness throughout their thickness.
Sprinkle flour on the table, place the dough on it and continue pulling again until the threads are as thick as noodles. Boil the noodles in lightly salted water until tender.
Peel the onions and cut into half rings. Cut the beef into small pieces and fry with the onion in a pan greased with vegetable oil. Season the meat with salt, pepper, vinegar, and crushed garlic. After 5 minutes, pour the broth into the pan and simmer over low heat until tender.
Heat the boiled noodles, put them in portions on plates and cover with meat sauce. Dungan noodles can be served.
Dungan noodles with minced meat
If you want to save time, you can use spaghetti or plain noodles instead of hand-made noodles. To prepare 5-6 servings you will need:
- 1000 g of vermicelli;
- 500 g minced meat;
- 300 g of onions;
- 150 g of carrots;
- garlic - 5 cloves;
- 2 tbsp. l. tomato paste;
- 100 ml of vegetable oil;
- salt, black pepper, ground paprika (to taste).
Peel the onions and chop finely, grate the carrots. Pour vegetable oil into a deep frying pan and fry the low-fat minced meat until all the liquid has evaporated. Then add onions, carrots, crushed garlic, tomato paste to the minced meat and fry for 10 minutes, stirring constantly. Do not forget to add salt to the dish and add ground pepper and paprika.
Meanwhile, boil noodles or spaghetti in salted water until tender.
After 10 minutes, pour about 100 ml of boiled water into the frying pan with minced meat, cover the pan with a lid and simmer over low heat for about 20 minutes. At the very end, add the vermicelli to the minced meat and fry for 5 minutes.
Put the prepared Dungan noodles with minced meat in portions on plates, garnish with finely chopped herbs (onion, dill, etc.) on top.
