    • 230 g semolina;
    • a glass of milk;
    • glass of water;
    • 50 g butter;
    • 2 handfuls of raisins;
    • salt;
    • 2-5 eggs;
    • 1-2 cups flour;
    • vegetable oil;
    • powdered sugar;
    • 350 g of berries;
    • 10 g yeast;
    • 30 g starch;
    • 25 g sugar;
    • blender;

Instructions

Step 1

Prepare the base for the pancake dough - warm semolina porridge. You can use ready-made half-eaten semolina, or cook it specifically for pancakes from 230 grams of cereal and 400 ml of milk and water (1: 1 ratio).

Season the porridge with two tablespoons of ghee and cool until warm.

Step 3

Rinse 2 handfuls of raisins thoroughly and stir with semolina. Salt the resulting dough to taste and beat 2 large chicken eggs into it.

Step 4

If you want to make the semolina pancakes more sticky, add in small portions a glass of sifted wheat flour. Stir the resulting mass thoroughly so that it becomes completely homogeneous.

Step 5

Pour 1 tablespoon of sunflower or olive oil into a skillet and start spreading the semolina dough into the hot fat. Fry the pancakes on both sides until they have a beautiful golden crust.

Step 6

Sprinkle the finished dish with powdered sugar (about two tablespoons) and pour over the berry sauce. For it, sort out 350 grams of soft fresh berries (raspberries, strawberries or a mixture of them) and grind in a blender.

Step 7

Place the puree in a small saucepan, add 150 grams of granulated sugar and pour in a liter of water.

Step 8

Bring the sauce to a boil and thicken with potato starch gruel (30 g of powder in a little chilled boiled water). Cool the berry sauce before use by placing the saucepan in cold water.

Step 9

For especially fluffy semolina pancakes with raisins, it is recommended to prepare a yeast dough. Pre-pour 200 g of cereal with two glasses of warm milk so that it swells. Place in a warm place for 2 hours.

Step 10

Add 1 tablespoon of granulated sugar and 10 g of yeast dissolved in warm water to the semolina. Add pure raisins. Leave the dough warm until it rises.

Step 11

Separate the yolks from five large eggs, beat them with a broom and pour into the dough. Place the whites in a separate bowl and refrigerate.

Step 12

Add 2 cups of wheat flour to the dough with constant stirring. If necessary, you can adjust the density of the mass with warm boiled water.

Step 13

Wait for the dough to rise slightly again. In the meantime, beat the cooled egg whites until fluffy.

Step 14

Pour half a glass of vegetable oil into the finished pancake dough and carefully add the protein foam. Salt and sugar the mixture to your liking.

Bake semolina pancakes (see step # 4) and brush with butter.
