The main secret of this baking is the apple slicing. They are shredded into the thinnest plates, about 3-5 mm thick, no more. Otherwise, it will be difficult to achieve the trademark "invisibility" on the cut.

This cake should have a filling that melts in your mouth. To get it just like that, give preference to juicy, ripe and soft apples. The ideal option is the fruits of a new harvest. If you could not find “home” apples, choose the “Golden” variety in the store.

  1. Knead the dough. To do this, whisk 3 eggs with 100 g of sugar into a light foam. Add sifted flour mixed with baking powder and pour in vegetable oil, milk and 1 tbsp. l. cognac. Instead of the latter, you can use rum, at worst - wine. Mix the ingredients thoroughly. Visually, the dough seems small, but do not be alarmed - this is the whole essence of this pie.
  2. Prepare your apples. Remove the core and rind. Slice the fruit into thin slices. You can use a special grater or food processor.
  3. Stir the apple slices into the dough. It just kind of envelops them. The dough will rise in the oven.
  4. Pour the mixture into a parchment-lined mold. If it is absent, grease the dishes with butter. The ideal mold diameter for a given dough volume is 18 to 25 cm.
  5. Place the dish in an oven preheated to 200 ° C. For optimal baking of apples, usually half an hour is sufficient.
  6. Take up the preparation of the so-called pouring. Combine remaining egg, sugar and cognac, add melted butter and whisk.
  7. Remove the baked goods from the oven and top with the mixture. Continue cooking the pie for about 15 minutes more.
  8. Let the baked goods cool down. This usually takes about 3-4 hours. Better to leave the cake in the refrigerator for 10-12 hours. Sprinkle cinnamon on the baked goods before serving and garnish with any berries if desired.

"Invisible" apple pie on shortcrust pastry: a step-by-step recipe

If the recipe for the "Invisible" pie according to GOST seems boring to you, do not be afraid to improvise. Try making it with shortcrust pastry. Thanks to him, baked goods will turn out to be crumbly and melt even more in your mouth. The main thing remains unchanged - a little dough and a lot of apple filling. However, the taste will be different, but the "invisibility" will remain.

You will need:

  • 1 tbsp. flour;
  • 100 g butter;
  • 1 tbsp. l. Sahara;
  • 1/2 tbsp. l. vinegar;
  • 1/2 tsp soda;
  • 8 apples.

Step by step cooking

  1. Sift flour and add butter. If you forgot to melt it, just rub it on a coarse grater. To avoid the specific taste of soda in the dough, do not extinguish it with vinegar. Better add to the flour, and pour the vinegar into the dough while kneading.
  2. Add sugar and rub the dough with your hands. You should get a mass that looks like crumbly crumbs.
  3. Cut the apples into thin slices and combine with the dough. Place the mixture in a previously lined parchment or oiled mold. You can do otherwise: do not mix the dough with apples, but first put it on the bottom in a thin layer, then place the plates, and sprinkle them with a sand mass on top.

You will need:

  • 7-8 apples;
  • 200 g flour;
  • 150 g sugar;
  • 3 eggs;
  • 200 g butter;
  • cinnamon to taste.

Step by step cooking

  1. Whisk butter and 40 g sugar in a deep bowl until smooth.
  2. Add 2 eggs and the yolk from the third. Leave the protein, it will come in handy later. Beat the mixture for about a minute, no more.
  3. Add the sifted flour and start stirring with a spoon. As soon as the dough has gathered a little, continue kneading with your hands. Roll the mass into a ball, wrap in plastic and refrigerate for 40-50 minutes.
  4. Remove the peel from the apples and cut into thin slices.
  5. Combine the remaining sugar and cinnamon. Add apple slices and stir.
  6. Roll out the dough to the diameter of the mold. An important condition is that it must be subtle.
  7. Place the apple slices on top of the dough. Step back a little from the edges so that later you can fasten them without any problems. Cover the apples with rolled dough on top and blind the edges, having previously moistened your fingers with water. Make 2-3 cuts for the steam to escape.
  8. Whisk the egg white and brush over the cake. Sprinkle with powdered sugar if desired.
  9. Preheat the oven to 170 ° C. The American version of the Invisible Pie is best baked on convection mode. Bake the cake for 45 minutes. Chill before serving. If you don't have time for this, add ice cream to the hot pie.

French "invisible" apple pie

You will need:

  • 1 kg of apples;
  • 60 g butter;
  • 150 g sugar;
  • 4 tbsp. l. flour;
  • 3 eggs;
  • baking powder.

Step-by-step cooking

Beat eggs with 3 tbsp. l. sugar until thick foam. Pour flour mixed with baking powder and sifted into it. You should get a homogeneous mass of liquid consistency.

Cut the apples into thin slices, sprinkle with the remaining sugar and let sit for about 10-15 minutes to juice. Then add to the dough.

Select a dish with a diameter of about 25 cm. Line it with baking paper and dabbed with butter. Place the dough in a mold and bake for about 30-35 minutes. Cool the finished pie and serve.

You will need:

  • 6 large apples;
  • 10 tbsp flour;
  • 50 g walnuts;
  • 100 g sugar;
  • 2 eggs;
  • 50 g butter;
  • 100 ml of milk;
  • lemon;
  • baking powder;
  • a pinch of salt;
  • 1 tsp ground cinnamon.

Step-by-step cooking

  1. Pour 70 g sugar, sifted flour with baking powder, salt and cinnamon into the milk. Add eggs and knead the dough. Leave it on for 20 minutes.
  2. Cut the apples into thin slices and drizzle with lemon juice. Add dough and stir lightly.
